Easy Ranch Pasta Salad
- 1 lb cavatappi pasta (or similar like rotini, bowties or penne)
- 1/2 lb broccoli florets
- 10 oz cherry tomatoes (halved)
- 1 cucumber (peeled and chopped)
- 2.5 oz crumbled bacon (or about 4-5 cooked bacon strips, crumbled)
- 1/2 C grated Parmesan cheese
- 1/4 C diced red onion (optional)
- 1 1/2–2 C ranch dressing (like Hidden Valley ranch)
- salt and pepper to taste
- Cook pasta according to package directions. Drain, rinse and allow to cool completely.
- Add pasta to a large serving bowl and add in broccoli, tomatoes, chopped cucumber, bacon, Parmesan and red onion.
- Add in 1 1/2 cups ranch dressing and toss. If desired add more ranch dressing or if not serving right away toss in a little more ranch dressing right before serving.
- Season well with salt and pepper.
- Refrigerate until ready to serve.
