Slow Cooker or Instant Pot Italian Beef

Whether you love slow cooking or using your Instant Pot or pressure cooker, this Italian Beef will become a family favorite!

SLOW COOKER OR INSTANT POT ITALIAN BEEF

You have not had Italian Beef until you have tried this! This Italian Beef is probably on the top of my family favorite list. I could make it every week for them and they’d never get sick of it. When my kids want seconds and thirds of a meal, I know it’s a keeper!

This Italian Beef can be made in your slow cooker/crock-pot or Instant Pot/pressure cooker. I’ve included directions for both. If you’re like me, sometimes you’re in the mood to break out the slow cooker, other days you feel like getting it done quick in the pressure cooker. Either way you’ll get the same results; tender and juicy Italian Beef!

This beef is delish on it’s own sliced thin and served with mashed potatoes and veggies. That’s the way I typically serve it, but you could even serve these on buns or sliders too!

I hate to admit but I have a collection of both slow cookers and now pressure cookers. I’m sure I’m not the only one. Lately I’ve been loving my Ninja Foodi, which is the latest addition to my collection. I love it! It’s a pressure cooker and air fryer in one! Of course I have an Instant Pot and a Pampered Chef Quick Cooker too. At first I thought I was crazy, but honestly there have been times when I have the main dinner in one and the side dish like potatoes or rice cooking in the other. So it’s pretty handy that way. And my Instant Pot/pressure cooker rice is the best! There’s a secret to that rice that makes it super yummy. I make this almost everyday. The recipe is coming up soon here on the blog too!

Whether you prefer slow cooking, or using your pressure cooker, you are going to love this Italian Beef! It’s full of flavor and easy to toss in whatever vessel you choose to cook in. Easy prep is my kind of cooking!

Slow Cooker or Instant Pot Italian Beef

  • Yield: 0 servings

Ingredients

  • 3 pound chuck roast (or chuck tender roast)
  • 1 stick butter
  • 1/2 cup beef broth
  • 1/2 cup balsamic vinaigrette (like Ken's Balsamic Vinaigrette)
  • 3 tablespoon Italian dressing seasoning mix (from a packet or homemade)
  • 1 tablespoon minced garlic
  • 23 pepperonicni peppers from jar
  • 2 tablespoons pepperonicini juice
  • salt and pepper
  • 12 tablespoons cornstarch

Instructions

  1. Trim fat from roast and place in pot.
  2. Cube butter and add to pot along with remaining ingredients. Season with salt and pepper.

Slow Cooker

  1. To slow cooker. Cover and cook on low for 8-10 hours
  2. Remove roast from pot and place on cutting board. Turn slow cooker off and turn to high setting.
  3. Whisk together 1/4 cup water with 1 tablespoon cornstarch. Mix until blended and no lumps.
  4. Whisk mixture into liquid in the pot. Cook, stirring occasionally until sauce thickens. If you want thicker sauce mix together another 1/4 cup water and 1 tablespoon cornstarch and repeat until desired consistency. Turn pot off.
  5. Slice and shred beef and stir back into slow cooker with sauce and toss to coat. Season with additional salt and pepper to taste.

Instant Pot/Pressure Cooker

  1. Cover and make sure valve is on sealing.
  2. Cook on manual high pressure for 50 minutes.
  3. Natural release for 10 minutes then quick release remaining pressure.
  4. Remove roast from pot and place on cutting board. Turn pot off and switch to the saute setting.
  5. Whisk together 1/4 cup water with 1 tablespoon cornstarch. Mix until blended and no lumps.
  6. Whisk mixture into liquid in the pot. Cook, stirring occasionally until sauce thickens. If you want thicker sauce mix together another 1/4 cup water and 1 tablespoon cornstarch and repeat until desired consistency. Turn pot off.
  7. Slice and shred beef and stir back into pot with sauce and toss to coat. Season with additional salt and pepper to taste.

  1. I’m very excited to try this out! Just for future reference, do you add cornstarch to the crock pot and then add a tablespoon later? I am going to wait, but in your first step it says to add all of the ingredients; just wanted to check! 🙂 Thanks for all.of your amazing recipes!
