Meanwhile, melt chocolate chips in a microwave safe bowl in 30 second increments, stirring in between each interval until smooth and creamy.
Pat strawberry dry again.
Place a skewer into the top of strawberry and dunk and swirl in chocolate.
Place on baking sheet and remove skewer.
Continue with remaining strawberries.
Place in freezer for 10 minutes until chocolate is set.
If desired, drizzle with melted white chocolate and then freeze again until set.
Transfer to container and keep refrigerated until ready to serve.
