Prep-Ahead Freezer Breakfast Sandwiches
These prep-ahead freezer breakfast sandwiches are not only yummy but so easy to make a bunch to have stashed in the freezer!
I prep ahead these breakfast sandwiches all the time! They come together quickly and I am so happy to have them made to heat and eat for breakfast, and they taste like I just made them!
I make an assembly line on baking sheets with sliced English muffins. If you haven’t tried sourdough English muffins before you need to try them! They are so good and a great for these breakfast sandwiches too!
While I am slicing the English muffins and getting the meats prepped I bake the eggs. Once they are done and cool, I cut them into 12 pieces and the assembly is ready to begin!

These are fun to make too! There is something relaxing about making these and of course satisfying at the end when I see my bags stuffed with yummy breakfast sandwiches.
Heat and Eat
After the breakfast sandwiches are prepped I wrap them in parchment paper. You could use plastic wrap or wax paper, whatever you prefer.
To heat, simply remove from freezer wrapping and wrap in a paper towel. Microwave for 1 minute, turn over and microwave for an additional 45 seconds to 1 minute until warm and heated through.
It’s as easy as that!
How Long are They Good For?
Once they are wrapped, place in a freezer safe storage bag. Seal bag removing as much air out of the bag as possible and store in the freezer. A batch is good up to 3 months in the freezer.

Ingredients
- 12 large eggs
- 2 tablespoons milk
- 1/2 teaspoon salt
- Pinch of pepper
- 12 English muffins
- 12 cooked sausage patties, or deli sliced ham, Canadian bacon, or 12–16 slices of cooked bacon
- 12 thinly sliced cheddar cheese or cheese or choice
Instructions
Prep Eggs
- Preheat oven to 325 degrees.
- Spray a 9×13 baking dish with cooking spray.
- Whisk eggs, milk, salt and pepper until blended and pour into prepared baking dish.
- Bake on center rack for about 20 minutes until eggs are set.
- Set aside to cool.
Prep Breakfast Sandwiches
- Cut eggs into 12 squares or use round cutter
- Slice English muffins.
- Place egg piece on bottom of English muffin, top with meat then slice of cheese.
- Add top of English muffin.
- Wrap sandwich in parchment paper, plastic wrap or wax paper.
- Place wrapped sandwiches in a freezer safe bag, removing as much air as possible before sealing.
- Label bag for USE BY date. Sandwiches are good in the freezer up to 3 months.
- Place bag in freezer.
To Reheat
- Remove sandwich from wrapping and wrap in a paper towel.
- Microwave for 1 minute.
- Turn sandwich over and microwave for 45 seconds – 1 minute, until warm and heated through.
- Alternatively you can remove sandwich from wrapping and place in oven or toaster oven and bake in a 350 degree oven for about 10-12 minutes, or until heated through.
