HEALTHY APPLESAUCE SNACK CAKE

Fall is in the air with this yummy and healthy applesauce snack cake. You won’t even believe it’s gluten-free and sweetened naturally with maple syrup. It’s a real treat!

You can serve it for dust it with confectioners sugar which is what I like to do. I use Swerve confectioners sugar. You could also add a yummy frosting on top if you’d like or serve with a scoop of ice cream. It even makes a good breakfast cake too. Who doesn’t love cake for breakfast, right?

Whether you enjoy for breakfast or dessert you will certainly love this cake as much as my family and I do. It’s definitely a fall treat but I make this year round but there is just something about making this in the fall. Once in a while I’ll sauté some diced apples in cinnamon and serve it on top. Trust me, it’s so good!

My family loves when I make “snack cake”. The reason I call it snack cake is everyone snacks on it and I don’t add any frosting. Believe it or not my teenage twins don’t really like frosting so I never add it.

Healthy Applesauce Snack Cake

Ingredients

  • 1 1/2 cups old fashioned rolled oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup pure maple syrup
  • 3 large eggs
  • 1 tablespoon avocado or coconut oil*
  • 1 teaspoon vanilla extract
  • Swerve confectioners sugar for serving, optional

Instructions

  • Preheat oven to 350.
  • Spray a 8×8 baking dish with baking spray.
  • Add oats to a food processor or blender and pulse until you get the consistency of oat flour. You can pulse it less if you like a little more texture. Alternatively you can use pre-ground oat flour like Bob’s Red Mill.
  • Add oats to a medium mixing bowl along with baking powder, baking soda, cinnamon and salt and mix together.
  • Make a well in the center of dry mixture and add in applesauce, maple syrup, eggs, oil and vanilla.
  • Mix wet ingredients into dry ingredients until combined.
  • Pour into prepared baking dish.
  • Bake for about 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Set aside to cool.
  • Dust with confectioners sugar before serving if desired.

Notes

*I use Chosen Avocado Oil. Coconut oil also works but will give a slight hint of coconut.
