Low Carb Peanut Butter Cookies

An easy 4 ingredient, low carb recipe for peanut butter cookies! 

  • Yield: 6 cookies 1x

Ingredients

  • 1/2 C peanut butter (preferably natural peanut butter, creamy or crunchy)
  • 1/2 C Swerve (or similar sugar substitute)
  • 1 large egg
  • 1/8 t vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl mix together peanut butter, sugar substitute, egg and vanilla until combined.
  3. Divide mixture into 6 equal parts and roll into balls. Place on a parchment lined baking sheet.
  4. Press down on each ball with a fork creating a criss cross pattern.
  5. Bake for 10-14 minutes. Allow to cooking for 5 minutes. 

Notes

If desired, before baking sprinkle each with coarse sea salt for a sweet and salty treat!
