Yield: 6 cookies 1x Ingredients Copy to clipboard Copy to clipboard Scale 1x2x3x 1/2 C peanut butter (preferably natural peanut butter, creamy or crunchy) 1/2 C Swerve (or similar sugar substitute) 1 large egg 1/8 t vanilla extract Instructions Preheat oven to 350 degrees. In a bowl mix together peanut butter, sugar substitute, egg and vanilla until combined. Divide mixture into 6 equal parts and roll into balls. Place on a parchment lined baking sheet. Press down on each ball with a fork creating a criss cross pattern. Bake for 10-14 minutes. Allow to cooking for 5 minutes.
