In a large bowl combine flour, yeast, sugar and salt and mix well.
Make a well in the center and add water and olive oil.
Stir wet and dry ingredients together with a spoon until mixture becomes to stiff then mix with hands until dough comes together and pulls away from the sides of the bowl.
Gently knead dough on a lightly floured surface until dough is smooth and just a little sticky.
Place dough in a large clean bowl and cover bowl with a kitchen towel or plastic wrap. Set aside in a warm place to let dough rise and double in size, about 1 hour.
Punch down dough and divide into 12 balls. Form into desired shape.
Place rolls on a large baking sheet. Cover baking sheet with kitchen towel and set aside to rise again for 30-45 minutes.
Preheat oven to 400 degrees Fahrenheit.
Bake rolls on center rack for 15-20 minutes until golden brown.
Notes
If dough is too stiff when stirring, add more warm water a little at a time until dough forms. If you add to much water and dough becomes to sticky, add more flour.
