1 3/4 cup
milk
1/2 cup
pumpkin puree
2 tablespoons
light brown sugar
1 tablespoon
white sugar
1 1/2 teaspoons
cinnamon
1/4 teaspoon
ground ginger
Pinch of nutmeg
1/2 teaspoon
vanilla extract
1/4 teaspoon
salt
1 1/2 cup
old-fashioned rolled oats
Topping (optional)
3 tablespoons
light brown sugar
Pinch of cinnamon
1 tablespoon
chopped pecans (optional)

Instructions
In a large saucepan mix milk, pumpkin puree, sugars, cinnamon, ginger, nutmeg, vanilla extract and salt and bring to a boil over medium heat.
Stir in rolled oats and stir for about 2-3 minutes.
Reduce heat to a simmer and continue to cook for about 3 minutes.
Remove from heat and cover for 2 minutes.
Serve warm.
Topping
Heat oven to broiler setting.
Place oatmeal in individual oven safe ramekins. Sprinkle with brown sugar and cinnamon.
Place ramekins on a baking sheet and place under the broiler for about 1-3 minutes until topping is caramelized.
Sprinkle with pecans and serve.
