Low Carb Meatballs with Marinara

Ingredients

Meatballs

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup water
  • 1 teaspoon dried parsley flakes
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon fresh black pepper

Marinara

  • 28 ounce can whole plum tomatoes (preferably San Marzano)
  • 1 1/2 teaspoons dried oregano
  • 3/4 teaspoon salt, or to taste
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon fresh black pepper
  • 1 bay leaf

Instructions

Meatballs

  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients for the meatballs in a large bowl and mix well.
  3. Roll into 2 tablespoon size balls and place in a large baking dish.
  4. Bake meatballs for 25 minutes until cooked thoroughly.

Marinara

  1. Place all ingredients for marinara except bay leaf in a blender and pulse a few times until blended.
  2. Pour sauce in a large, deep skillet, add bay leaf and heat over medium-low heat.
  3. Add meatballs and simmer for at least 30 minutes.

Notes

Optional – Top meatballs with mozzarella and place until broiler until melted. Sprinkle with fresh basil.
