Strawberry Shortcake Waffles

Ingredients

  • 2 cups all-purpose baking mix
  • 1 1/3 cup whole milk
  • 2 tablespoons butter, melted
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon vanilla extract

Basil Whipped Cream

  • 2 cups heavy whipping cream
  • Large handful fresh basil (about 3/4 cup including stems)

Whipped Cream

  • 2 cups heavy whipping cream
  • 2 tablespoons sugar

Instructions

  1. In a large bowl mix milk, butter, egg, vanilla and sugar until blended.
  2. Stir in baking mix just until blended.
  3. Follow instructions of waffle maker to cook waffles.

Basil Whipped Cream

  1. Simmer heavy whipping cream and basil in a medium saucepan over low heat for about 45 minutes.
  2. Remove from heat and allow to cool completely.
  3. Remove basil from cream with tongs, and strain into a mixing bowl.
  4. Using an electric mixer with the whisk attachment, mix on high until stiff peaks form.
  5. Dollop on top of waffles.
  6. Store in an airtight container in the refrigerator.

  1. Pour heavy cream in a mixing bowl.
  2. Using an electric mixer with the whisk attachment, mix on high until stiff peaks form.
  3. Fold in sugar
  4. Dollop on top of waffles.
  5. Store in an airtight container in the refrigerator.
