1/3 cup unpopped popcorn (or about 3 quarts popped)
20 Mint Oreo Cookies, crushed
1/4 cup butter
1/4 cup sugar
2 cups mini marshmallows
1 teaspoon peppermint extract
A few drops green food coloring (optional)
Instructions
Pop popcorn and place in a large bowl. Toss crushed Oreos with popcorn and set bowl aside.
Melt butter and sugar in a medium saucepan over medium heat. Reduce heat to low, add marshmallows and cook, stirring frequently until marshmallows have melted.
Remove from heat, stir in extract and a few drops of green food coloring.
Pour mixture over popcorn and gently toss using a large spatula to coat.
Notes
Easily crush Oreo’s placing them in a large resealable bag. Use your hands, rolling pin or mallet to crush them. Crush to desired consistency.
