Coconut Pineapple Oatmeal

Escape to the tropics with a warm bowl of Coconut and Pineapple Oatmeal topped with crunchy banana chips, coconut flakes and macadamia nuts.


  • 1 can (13.5 ounce sweetened lite coconut milk)
  • 1 cup old-fashioned rolled oats
  • Pinch of salt
  • 1/2 cup crush pineapple
  • 3 teaspoons of sugar (or to taste)
  • 1/4 cup banana chips
  • 1/4 cup macadamia nuts
  • 2 tablespoons coconut flakes


  1. In a medium saucepan bring coconut milk and a pinch of salt to a boil over medium heat.
  2. Whisk in oats and cook, stirring occasionally for about 5 minutes until thickened.
  3. Remove from heat and stir in crushed pineapple and sugar. Set sit for 2-3 minutes.
  4. Divide into serving bowls and top with banana chips, macadamia nuts and coconut flakes.
  5. Serve warm.
