Banana Cream Pie Yogurt Parfaits

An easy and delicious recipe for Banana Cream Pie Yogurt Parfaits layered with crumble Nilla wafers, sliced bananas and a banana cream filling made with Greek yogurt.

Ingredients

  • 1 1/2 cups non fat greek yogurt
  • 1 cup milk
  • 1 1 ounce package sugar-free, fat-free Banana Cream or Vanilla pudding mix
  • 2 cups crushed Nilla wafers or graham crackers
  • 2 ripe banana (sliced)
  • 2 cups dairy whipped cream
  • 1/4 coconut flakes

Instructions

  1. In a medium bowl stir yogurt, milk and pudding mix together until creamy.
  2. To assemble parfaits, add 1/4 cup crushed Nilla wafers to the bottom of small glasses or mason jars, top that with 1/4 cup banana cream filling and a layer of sliced bananas.
  3. Repeat one.
  4. Refrigerate until ready to serve.
  5. Dollop with whipped cream and toasted coconut before serving.

Notes

To toast coconut, preheat oven to 350 degrees. Place coconut flakes on a small baking sheet and bake for 2-4 minutes until toasted. Cool and sprinkle on top of parfaits.
The filling makes a yummy dip too! Serve with Nilla wafers, graham crackers or even fruit.
