White Chocolate Pomegranate Blondies

Buttery soft blondies filled with white chocolate chips and fresh pomegranate arils. A yummy treat everyone will love!


Units Scale
  • 1/2 cup 1 stick unsalted butter, melted and cooled
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup Bloom Fresh pomegranate arils (patted dry)
  • 1/2 cup white chocolate chips


  1. )Preheat oven to 350 degrees.
  2. Spray an 8×8 baking dish with cooking spray then line with parchment paper and set aside.
  3. Whisk butter and sugar until creamy.
  4. Add in egg and vanilla until blended.
  5. Gradually stir in flour and salt until combined.
  6. Fold in pomegranate arils and white chocolate chips
  7. Spread batter evenly in prepared baking dish.
  8. Bake for 35-40 minutes until toothpick inserted into the center comes out clean.
  9. Cool completely in baking dish.
  10. Carefully remove from parchment paper and cut into squares.
  11. Store in an airtight container until ready to serve.
