Asian Chicken Burgers

Ingredients

  • 6 sprigs fresh mint leaves
  • 8 sprigs fresh cilantro
  • 3 green onions
  • 1/2 head iceberg lettuce
  • 1 cucumber
  • 6 radishes
  • 2 tablespoons sesame seeds
  • 1 lime
  • 1 lb ground chicken
  • 1 tablespoon cornstarch
  • 3 tablespoon mayonnaise
  • Salt and pepper
  • 4 crusty rolls

Instructions

  1. Chop mint leaves, cilantro, green onions and shred lettuce and set aside.
  2. Slice cucumber and radishes into quarter slices.
  3. Heat skillet over medium heat and toast sesame seeds for about 3 minutes until golden. Set aside to cool.
  4. Zest and juice the lime.
  5. Mix the ground meat with the sesame seeds, half the mint, half the cilantro and half the green onions along with cornstarch and lime zest. Season mixture with salt and pepper.
  6. Using wet hands, form the meat mixture into 4 patties.
  7. Mix the mayonnaise with the remaining green onions. Add lime juice and season with a pinch of salt and pepper to taste.
  8. Heat the grill or skillet. Cook the chicken burgers for 6 to 8 minutes per side until cooked thoroughly.
  9. Pile chopped lettuce on bottom half of bun. Top with a burger, cucumber, radish, lime mayonnaise and remaining herbs.
