Oatmeal Fig Jam Squares

Ingredients
- 1 cup all-purpose flour
- 1 cup Quaker® Old Fashioned Rolled Oats
- 1/2 cup light brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup 1 stick butter, cubed and room temperature
- 1/2 teaspoon almond extract
- 3/4 cup fig jam
Instructions
- Preheat oven to 350 degrees.
- Spray an 8×8 baking dish with cooking spray and set aside.
- In a large bowl mix together flour, oats, sugar, baking powder and salt.
- Mix in butter using a fork, pastry blender or hands until combined.
- Gently mix in almond extract.
- Reserve 1 1/2 cups of mixture and press the remaining mixture on the bottom of prepared baking dish.
- Spread fig jam on top.
- Sprinkle the remaining flour and oat mixture on top of fig jam.
- Bake on the center rack for 35 to 40 minutes until golden brown.
- Cool before cutting into squares.
