One-Pot Beef and Cabbage Stir Fry (Easy + Paleo)

Ingredients

  • 3 tablespoons coconut aminos
  • 3 teaspoons raw honey
  • 1/4 teaspoon freshly grated ginger
  • Pinch of red pepper flakes
  • 1 teaspoon olive oil
  • 1/2 small sweet or white onion (diced)
  • 23 garlic cloves (minced)
  • 1/2 pound ground beef
  • 3 cups thinly sliced green cabbage
  • 1 cup thinly sliced red cabbage
  • 1 cup julienne carrots
  • 1/3 cup chopped green onion
  • Salt and pepper
  • Freshly chopped cilantro and basil for serving (optional)

Instructions

  1. In a small mason jar shake together coconut aminos, honey, ginger and a pinch of red pepper flakes until combined. Set aside.
  2. Heat olive oil in a large deep skillet or wok over medium high heat.
  3. Add onions and cook stirring occasionally until slightly tender, about 5 minutes.
  4. Add garlic and cook for about 1 minute more until fragrant.
  5. Add in ground beef and season with a pinch of salt and pepper.
  6. Cook beef stirring occasionally cooked throughly.
  7. Add in cabbage and carrots and cook stirring until heated through and is slightly tender, about 3-4 minutes.
  8. Stir in sauce and toss to coat.
  9. Cook for a minute or two longer.
  10. Stir in green onion.
  11. Season with additional salt and pepper to taste.
  12. Garnish with freshly chopped cilantro and basil before serving.

Notes

You can substitute the cabbage and the carrots for 1 (9 oz.) bag of Trader Joe’s Organic Green and Red Cabbage with Carrots mix or similar.
