Blueberry Lemon Poppy Seed Cake

BLUEBERRY LEMON POPPY SEED CAKE

Want to whip up an easy dessert? Then try this delicious Blueberry Lemon Poppy Seed Cake. With just a few simple ingredients you can whip up this tasty cake in no time!

Ingredients

Cake

  • 1 box (15.25 oz) lemon cake mix
  • water, oil and eggs per package ingredients
  • 1 tbsp poppy seeds
  • zest of 1 lemon
  • 1 can (21 oz) blueberry pie filling

Topping

  • 2 cups heavy whipping cream
  • 1/4 cup sugar
  • zest of 1 lemon (optional)
  • 1 cup fresh blueberries for garnish (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare cake mix per package instructions.
  3. Mix in poppy seeds and lemon zest.
  4. Pour batter into a greased 9×13 baking dish.

  5. Dollop blueberry pie filling by the spoonful over top of cake batter.

  6. Using the back of a butter knife gently swirl blueberry filling into batter.

  7. Bake cake for 21-28 minutes until cake is brown and a cake tester inserted into the center of the cake comes out clean. Check cooking time on cake mix for accurate bake time. 
  8. Cool cake completely before adding topping.
  9. Meanwhile add heavy whipping cream, sugar and lemon zest to a large bowl and whip on high using an electric or handheld mixer for 4-5 minutes until stiff peaks form. 
  10. Chill whipped cream in the refrigerator until ready to use. 
  11. Once cake has cooled completely spread whipped cream on top of cake.
  12. Garnish with fresh blueberries.
  13. Keep cake chilled until serving.
