Fathead Pizza Dough


  • 2 T cream cheese (regular not light)
  • 1 1/2 C shredded mozzarella cheese
  • 1 large egg
  • 1 C almond flour (I like Bob’s Red Mill super fine almond flour)
  • pinch garlic powder
  • pinch of salt and pepper


  1. Add cream cheese and mozzarella cheese to a large microwave safe bowl and microwave for 45 seconds.
    Remove from microwave and mix together. It won’t be completely melted. That’s ok. Use a spatula to really press the mixture together.
  2. Place mixture back in the microwave for an additional 25-45 seconds until combined. You don’t want it completely melted, just enough so it’s slightly creamy. 
  3. Whisk egg, and add to cheese mixture along with almond flour, a pinch of garlic powder, salt and pepper. Mix, pressing together (again the spatula works best for this) until mixture is combined. It won’t be “doughy”but will come together. It will be slightly sticky but that’s ok.
  4. Sprinkle a little almond flour a on a clean surface. Lay out your dough. Sprinkle top of dough with more almond flour and press using your hands to form crust. Transfer to parchment paper, or you can make the dough right on the parchment paper.
    Once you form the crust, bake for about 8 minutes. 
  5. Remove crust, add topping and pop back in the oven for a 4-5 more minutes until cheese is melted.
    Let cool for a few minutes before slicing.
