Chicken Salad with Apples, Grapes, Almonds and Dill


  • 1 pound boneless (skinless chicken breast)
  • Olive oil
  • 1 cup chopped granny smith apple
  • 1/2 cup halved seedless red or black grapes
  • 1/4 cup slivered almonds
  • 2 teaspoons chopped fresh dill
  • 1/2 cup mayonnaise
  • Salt and pepper to taste


  1. Preheat oven to 375 degrees.
  2. Place chicken breasts on an foil lined baking sheet.
  3. Drizzle with a little olive oil and season with salt and pepper.
  4. Bake for 35-40 minutes until chicken is cooked thoroughly.
  5. Set aside to cool.
  6. Once chicken is cool, chop chicken into bite size cubes.
  7. Place chicken in a large bowl and add apples, grapes, almonds and dill.
  8. Add mayonnaise and stir until combined. Add in a little more mayonnaise if desired.
  9. Season with salt and pepper to taste.
  10. Cover and refrigerate until ready to serve.
