Chicken Salad with Apples, Grapes, Almonds and Dill
An easy recipe for Chicken Salad loaded with chunks of granny smith apples, grapes, almonds and fresh dill.
I’m a sucker for good chicken salad. I love it on croissants, sandwiched between Italian bread, in wraps, lettuce wraps or even right out of the bowl with a fork.
Usually I make a classic chicken salad with mayo, chopped celery, onion and some garlic. It’s one of Mr. Mother Thyme’s favorite and he requests it often. He gets a little twinkle in his eyes when he sees it on the menu. I make it a lot on the weekends and we’ll have it for lunch when we are at our camp.
Lately I have been on a dill kick. Which yes, that means be prepared for some dill recipes coming up such as my Baked Lemon Salmon with Creamy Dill Sauce that I recently posted on Instagram. It is so good and takes less than 30 minutes to make.
With my summer herb garden planted and steps away from my kitchen I love using them as much as I can. I’m crazy for fresh herbs. Not only do they smell amazing but they add so much flavor to any recipe.
There is a cute little grocery store I like to go to that has the best Signature Chicken Salad. Every time I go there I always get a little container of it. This Chicken Salad with Apples, Grapes, Almonds and Dill is just like the Signature Chicken Salad. Chunks of cooked chicken, chopped granny smith apple, halved grapes, slivered almonds and lots of fresh dill tossed with mayonnaise create this delicious chicken salad that is perfect for any summer time picnic.

Ingredients
- 1 pound boneless (skinless chicken breast)
- Olive oil
- 1 cup chopped granny smith apple
- 1/2 cup halved seedless red or black grapes
- 1/4 cup slivered almonds
- 2 teaspoons chopped fresh dill
- 1/2 cup mayonnaise
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Place chicken breasts on an foil lined baking sheet.
- Drizzle with a little olive oil and season with salt and pepper.
- Bake for 35-40 minutes until chicken is cooked thoroughly.
- Set aside to cool.
- Once chicken is cool, chop chicken into bite size cubes.
- Place chicken in a large bowl and add apples, grapes, almonds and dill.
- Add mayonnaise and stir until combined. Add in a little more mayonnaise if desired.
- Season with salt and pepper to taste.
- Cover and refrigerate until ready to serve.
