CAPRESE CHEESE BOARD

It’s beginning to look a lot like Christmas everywhere you go! I just love that song by Johnny Mathis. I remember when I was a kid my mom would play that album, yes I said album my friends, I’m that old, and when she did I knew the Christmas season had begun.

To this day that entire album or should I say CD or Amazon Music which is how I listen to most of my music now is my favorite and it still takes me back to by childhood. Baking cookies with my mom, decorating and all the fun things that happen during the holiday season.

And now that I’ve mentioned that song you’ll probably have it in your head the rest of the day, right?  Hey it’s not such a bad thing!

And you know what else is not such a bad thing, this stunning Caprese Cheese Board. Isn’t she pretty! I sure think so! I’m kind of obsessed with it actually. Not only because it’s loaded with a lot of my  favorite things like juicy tomatoes, fresh mozzarella and olives but it’s so easy to make too! And while this Caprese Cheese Board is fantastic year round the color combination is perfect for any holiday celebration.

This Caprese Cheese Board would be the perfect addition to any holiday party plus you can assemble it ahead of time and just drizzle it with the vinaigrette before putting out on your holiday buffet. Easy peasy my friends!

Whether you’re having a holiday party or going to one and looking for some ideas of what to make and bring this needs to go on your list! This is on the top of my go-to list because it’s effortless and looks and tastes amazing! I serve this with toothpicks, little forks and a knife to cut the fresh mozzarella ball. You can even slice the mozzarella ahead to make it easier.

The star of the show are the beautiful NatureSweet Tomatoes. Have you ever tried NatureSweet Tomatoes before? I honestly love them and buy them all the time. They’re one of my go-to snacks. If I’m on the go I pop some in a baggie to snack on while I’m running errands. They’re the perfect sweet snack that I can just grab and enjoy.

Not only do I love NatureSweet Tomatoes to snack on but I toss them in salads, in pasta or to make my Pesto and Cream Cheese Stuffed Tomatoes (another easy and delicious appetizer to add to your list!)

For my Caprese Cheese Board I selected the NatureSweet Constellation. It’s the perfect tomato for every occasion. It’s got a mix of their favorite small tomatoes in one delicious and colorful pack! I also added in a few Cherubs®. I kept most of the tomatoes whole and sliced just a few for presentation. Feel free to create it however you like.

CAPRESE CHEESE BOARD

For this Caprese Cheese Board you need the following:

  • 1 container of NatureSweet Constellation™ (I also add in a handful of NatureSweet Cherubs®)
  • 1 fresh mozzarella ball
  • 12 ounce container bocconcini
  • 8 ounces olives (I like to use a variety)
  • A few handfuls of arugula
  • 8-10 slices sopressata
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon freshly chopped basil plus additional for prettying up the platter.
  • I tossed in a small handful of pine nuts just for a little crunch and for presentation. I like this for when you get you get to the bottom of the platter and you got the arugula in the vinaigrette with the crunchy pine nuts. It’s like a little salad but it’s totally optional.

Simply gather all your ingredients and start by layering a bed of arugula on the entire plate. Now you can start assembling everything. I use a 9×12 platter. I place the mozzarella ball in the center and then arrange all the tomatoes, olives, bocconcini around. Lastly tuck in slices of the sopressata. If I’m not serving right away I cover it tightly with plastic wrap and pop it in the refrigerator until I’m ready to serve. I’ll whip up the vinaigrette ahead of time too and before serving drizzle the yummy vinaigrette on top and dig in!
