Add oats to a food processor or blender and pulse until you get the consistency of oat flour. You can pulse it less if you like a little more texture. Alternatively you can use pre-ground oat flour like Bob’s Red Mill.
Add oats to a medium mixing bowl along with baking powder, baking soda, cinnamon and salt and mix together.
Make a well in the center of dry mixture and add in applesauce, maple syrup, eggs, oil and vanilla.
Mix wet ingredients into dry ingredients until combined.
Pour into prepared baking dish.
Bake for about 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Set aside to cool.
Dust with confectioners sugar before serving if desired.

*I use Chosen Avocado Oil. Coconut oil also works but will give a slight hint of coconut.
