Stuffed Peppers
Stuffed peppers are a quick and easy weeknight dinner to prepare. I haven’t made them in a while so I decided to make these last night. I don’t use a lot of complex ingredients; I keep the ingredients simple and they are always a hit. Serve with a side salad and fresh bread and dinner is served.
Stuffed Peppers
Serves: 4
Ingredients
4 Large Green peppers, tops removed, cleaned and seeded.
1 3/4 Cup Cooked white rice
1LB Ground sirloin or Ground beef
1/4 Teaspoon Salt
1/8 Teaspoon Pepper
1/4 Teaspoon Garlic Powder
1/3 Cup onion, chopped
1 Can Tomato soup
1/2 Cup Shredded mozzarella
Directions
In a large pot boil water. Add peppers and boil for 5 minutes. Remove from water and set aside.
In a large skillet on add ground beef, salt, pepper, onion and garlic powder and cook thoroughly.
Preheat oven to 325 degrees.
In a large bowl combine rice, ground beef and tomato soup. Fill peppers with mixture and set in a casserole dish or large pie dish. Top each pepper with mozzarella cheese and bake for 20 minutes. Serve immediately.
