I have combined two of my favorites, red velvet and chocolate chip cookies into one delicious Red Velvet White Chocolate Chip Cookie. They are so easy and everyone will love them, trust me! If you are heading to a holiday cookie exchange these year, you may want to put these on your list. My secret weapon in these cookies is chocolate instant pudding mix in place of typical cocoa powder. The result is one tasty cookie perfect for dunking in a cold glass of milk!
I am excited to be kicking off the Mother Thyme 2014 Countdown to Christmas…Cookies series with these yummy cookies. I have done this series since 2011. I have shared throughout the years some of my favorite Christmas cookie recipes like Iced Oatmeal Cookies, Pistachio Wedding Cookies and Lofthouse Sugar Cookies. Christmas is my favorite time of year and I love kicking it off with this series on MT.

It’s a snowy Monday here in Buffalo with a lot of snow expected these next few days. I love having Christmas music playing (yes, I am listening to Christmas music already) and doing some baking. So if you are stuck inside like I am these next few days, grab a few simple ingredients and whip up these cookies! Don’t forget you can start baking now and freeze these cookies. Just wrap them in plastic wrap and place in a freezer bag or container. When ready to serve just thaw at room temperature and you have fresh baked homemade cookies to enjoy!

Ingredients
- 2 1/4 cup all-purpose flour
- 1 3.4 ounce box chocolate instant pudding mix
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 sticks (1 cup butter, room temperature)
- 1/2 cup white granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon white distilled vinegar
- 1 1/2 tablespoons red food coloring
- 12 ounce bag white chocolate chips
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or silicone mats and set aside.
- In a large bowl mix flour, pudding mix, baking soda and salt and set aside.
- Using and electric mixer cream butter and sugars.
- Add eggs one at a time followed by vanilla and vinegar.
- Gradually add in flour mixture until combined.
- Stir in red food coloring until blended.
- Stir in white chocolate chips until combined.
- Make 1 tablespoon size balls of dough and place them 1 inch apart on prepared baking sheet. Bake for 10 minutes. Cool on baking sheet for a few minutes then transfer with a spatula to wire rack to cool completely.
- Store in an airtight container.
