With summer (almost) upon us, it’s time to be equipped with some tasty eats, treats and snacks to make anytime. I have a list of some of my favorite go-to eats that I can whip up anytime. No thinking. No stressing. I keep as much as I can of the ingredients on hand, and when I need it, I usually have it. Some of the items change seasonally, and I try to keep the shelf stable pantry items on hand, or things I can keep in the freezer. It’s a go-to list, so I don’t have to think. Sometimes my brain at mass capacity so if I can just hit my list, there’s no thinking, and searching. My list includes snacks, pasta salads, and things that we often have on hand. Some of my items includes parfaits (my kids eat them daily), caprese salad (great for summer cookout), basil pesto (you always need pesto!), desserts like cheesecake, trifles, frozen pound cake to top with berries and whipped cream, or a box of pound cake (Tastefully Simple has a delicious pound cake), and other items I can easily whip up to take to a picnic. You get the idea. Since I started doing it, it has saved my sanity just a little when it comes to ideas for what to make.
