An easy and yummy recipe for Italian Roasted Cheesy Potatoes. These potatoes are loaded with yummy goodness in every bite! You’ll definitely want to try these!
Who loves roasted potatoes? I prefer them over mashed potatoes. I could literally sit and eat an entire bowl of roasted potatoes. When they are done right they are soooo good! The worst is when you are ready to dive into a bowl of roasted potatoes and they are not seasoned enough, or even worse not roasted enough.
If you ask me what makes a good roasted potato is a crispy outside and super soft and buttery center. Top that with lots of flavor including garlic and you got one tasty roasted potato!
These Italian Roasted Cheesy Potatoes have it all, plus CHEESE! What could be better right? Of course you could omit the cheese if you want to and still have one tasty potato but who’d want to do that?
These little potatoes are loaded with flavor in every bite! Trust me, once you try these you’ll never roasted potatoes any other way again!
Not only do these make a tasty side dish, but double or triple the recipe to take to a party or a potluck!
My secret to the perfect roasted potato is to cook them cut side down for most of the way so they get nice and crispy. The last few minutes I flip them over. Total potato perfection!
The other thing that makes these little tots delish is the seasoning blend which includes lots of garlic, rosemary, paprika, salt and pepper. That’s it! At the end toss in some finely shredded Italian-Style cheese and cook for a few minutes longer until the cheese is nice and melted, then sprinkle with some parmesan and you are in potato heaven!

Italian Roasted Cheesy Potatoes
- 1 1/2 lb baby potatoes halved
- 3 T olive oil
- 1 T minced garlic
- 1 t paprika
- 1 t dried rosemary
- 1 t salt
- 1/2 t garlic powder
- 1/4 t black pepper
- 1 C finely shredded Italian-style cheese
- 2-3 T grated Parmesan cheese
- 2-3 T freshly chopped basil optional
Preheat oven to 425 degrees.
In a large bowl toss together potatoes, garlic, paprika, rosemary, salt, garlic powder and pepper until combine.
Line a large baking sheet with foil. Place the potatoes cut side down in a single layer on the baking sheet.
Roast potatoes for 25 minutes. Flip and continue to roast for another 5-10 minutes longer
Push potatoes together. Sprinkle with shredded cheese and bake for a few minutes longer until cheese is melted.
Remove from oven. Sprinkle with parmesan cheese and chopped basil. Cool for a few minutes before serving.
I love to use The Little Potato Company Potatoes. They cook great and the perfect size. For this recipe I used the Dynamic Duo Red and Yellow Creamer Potatoes.
Reynolds non-stick aluminum foil is great! I love to use this for roasting potatoes. The potatoes don’t stick and it’s easy clean up!
