Chicken and Black Bean Bake
Calling this just Chicken and Black Bean Bake makes this dish seem boring, and it is far from being boring. Â It is bursting with great flavors and topped with lots of melted cheese. Â Calling it Chicken and Black Bean and Fire Roasted Tomato Baked topped with Mozzarella and Feta is a little much for a title. Â Oh and did I mention this chicken is smothered in French dressing topped with crunchy onion mix?
If you are looking for a delicious, simple and did I mention delicious chicken dish you need to try this. Â
I always know when a new dish I create is a hit when my husband goes for seconds. Â And when he goes for thirds (yes, thirds in this case) well mommy Mother Thyme scored a home run! Â
This dish only takes a few minutes to prepare making it an ideal weeknight dinner. Â Drain your cans of beans and tomatoes and spread evenly a casserole dish. Â Sprinkle chicken with salt, pepper and garlic powder. Â Toss the chicken in the dressing and onion mix and place on top of beans and tomatoes. Â Off to the oven it goes to bake for fifty minutes. Â Add the cheeses, bake for a few minutes more, heat up some rice and dinner is served. Â

Chicken and Black Bean Bake
Ingredients
4 6oz chicken breasts
1 teaspoon garlic powder
½ cup French salad dressing
1 1oz envelope of onion soup mix
15.5oz can black beans rinsed and drained
14.5oz can fire roasted diced tomatoes drained
2 ½ cups shredded mozzarella cheese
½ cup crumbled feta cheese
Salt and Pepper to taste
Directions
Preheat oven to 375 degrees.
Spread black beans and tomatoes evenly on the bottom of a casserole dish. Â In a medium bowl, season chicken with salt, pepper and garlic powder. Â Pour French dressing over chicken followed by onion soup mix and coat well. Â Place chicken on top of beans and tomatoes. Â
Bake on center rack for 45-50 minutes until chicken is cooked thoroughly and internal temperature is 165-170 degrees when checked with a meat thermometer.
Sprinkle with mozzarella and feta cheese, return to oven and bake for another 5-7 minutes until mozzarella cheese is melted. Â
Remove from oven and let sit for 5 minutes. Â Serve alone or over rice.
Notes-
After placing cheese on chicken, place casserole or pie dish on top of a baking sheet to avoid any cheese dripping. Â
