White Chocolate Macadamia Nut Bread


Who doesn’t love White Chocolate Macadamia Nut Cookies?  You know those cookies that are so delicious that when a plate of freshly baked cookies are sitting in front of you, you can’t help to grab more than one (even if you try to resist).  I love White Chocolate Macadamia Nut Cookies but I don’t bake them often so when I was day dreaming about these chewy and delicious cookies one day I thought to myself why not try doing it a little different and baking it as a bread (since we know I have had my share of bread recipes lately).  

This is a simple and delicious bread and the white chocolate drizzled on top, oh my!

White Chocolate Macadamia Nut Bread


Makes 2 loaves


Ingredients:
For Bread
1 cup shortening
2 cups sugar
4 large eggs
2 teaspoons vanilla extract
3 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup milk
1 cup chopped macadamia nuts
¾ cup white chocolate chips
For Glaze
1 cup white chocolate chips
2 tablespoons shortening


Directions:
Preheat oven at 350 degrees.  Grease 2 9”x5” loaf pans.  


Using an electric mixer on low stir together shortening, sugar, eggs and vanilla extract until blended.  Sift flour, baking powder, baking soda, and salt.  Gradually add in flour mixture to shortening mixture alternating with milk until all combined and blended.  Stir in macadamia nuts and white chocolate chips.


Pour equal amounts into each loaf pan.  


Bake in preheated oven for 55-60 minutes until tester comes out clean.  Cool on wire rack.  Run butter knife around sides of loaf pan and turn loaf upside down to remove.  


Place white chocolate chips and shortening in microwave safe bowl.   On cook power 50%, heat on for 1 minute.  Remove and stir, and continue to heat until melted.  Drizzle on top of loaves and let chocolate harden before serving.
