Whole Wheat Apple Cinnamon Pancakes
It seems like every week I am coming up with a new favorite pancake recipe.
This one I have been making for a little bit now and the twins finally said “Mommy, you need to feature this recipe”.
Well, they didn’t actually say that since they are only a year and a half so there vocabulary is limited to Ma, Da, Tree (or pronounced tee), doggie (or dawgie as Ty would say), please (or puleeze) and a few other simple words. When I serve them these pancakes they get all excited and when they gobble them up and keep gestering for more I know these are good, and they are.
I first developed this recipe as a simple whole wheat cinnamon pancake and good golly they are good. I could just imagine a simple confectioner sugar glaze on top of these would be a cinnamon roll pancake however keeping things on a lighter note and on our quest to eat good I left out the confectioners sugar glaze and only imagined it. When I was making one batch I tossed in some freshly diced apples into the mix and it added another delicious element to these delicious cinnamon pancakes.
I have learned that once you have a base for a good basic pancake mix, creating varieties is simple with just a little tweak of ingredients while incorporating new ones. In most of my pancake recipes the majority of the ingredients are the same. Flour, sugar, baking powder, salt, milk, egg and a little butter. Just adjusting those basic ingredients and adding in some new flavors gives you a world of delicious pancake recipes at your fingers; including these yummy Whole Wheat Apple Cinnamon Pancakes.
