Meyer Lemon Poppy Seed Muffins
- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Total Time: 25 minutes
- Yield: 16 muffins
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup I Can’t Believe It’s Not Butter® Deliciously Simple™
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- Zest and juice of 1 meyer lemon
- 2 teaspoons poppy seeds
Glaze
- 1/2 cup confectioners’ sugar
- 1–2 tablespoons freshly squeezed meyer lemon juice
Instructions
- Preheat oven to 350 degrees. Line muffin tin with paper liners or spray with cooking spray and set aside.
- In a medium bowl mix flour, baking powder, baking soda and salt.
- Using an electric mixer, cream butter and sugar.
- Stir in eggs one at a time.
- Stir in vanilla, zest and lemon juice.
- Stir in sour cream.
- Stir in flour mixture until just combined. Don’t overmix.
- Stir in poppy seeds.
- Spoon batter into muffin tin filling each about 2/3 full.
- Bake for about 20 minutes until cake tester inserted into the center of the muffins come out clean.
- Cool on a wire rack.
Glaze
- In a medium bowl mix confectioners’ sugar and 1 tablespoon lemon juice. Stir in additional lemon juice until desired consistency. If glaze becomes too thin, stir in more confectioners’ sugar.
- Dip cooled muffin tops in glaze. Set on wire rack until glaze has set.

I have a bowl filled with Meyer lemons and these muffins would be the perfect use for them!
This look delishious, I have a hard time finding Meyer lemons though. I may have to substitute the standard lemon instead. I have also never baked using anything but butter so this may be a healthy alternative. Can’t wait to try them this weekend 🙂
