Can you believe it’s almost June? Don’t blink because before you know it we’ll be halfway through summer. Let’s soak in every minute of these long summer days and enjoy the lazy days of summer. Who’s with me?

We finally made it to our camp for the first time this year over the weekend. The weather was beyond gorgeous and my kids were thrilled to be back at camp playing, having campfires and making s’mores! The one thing about living in Western New York is even though we have a reputation for getting a lot of snow we have the best summers. Living here you truly get to experience the four seasons. Yes winter is snowy but it’s picture perfect for Christmas and a paradise for skiing and winter activities. Fall in New York is magical. It has the best fall foliage I’ve ever seen. And now that summer is almost here I’m embracing the beautiful outdoors and enjoying all the seasonal produce.

It’s been almost 5 years since I started Mother Thyme. My twins were about to turn 1 when I started MT. Now they are a few weeks away from graduating kindergarten and turning 6! Where does the time go?

In the 5 years I’ve been sharing recipes on MT I can’t believe I haven’t posted my perfect, go-to recipe for Tomato Bruschetta that I have made for years. I remember creating this before my twins were born while we were still living in Fredericksburg. Ever since it’s been my go-to Bruschetta recipe. It’s truly the best bruschetta and every time I make it for people they say the same thing. This no fuss Tomato Bruschetta is simple, fresh and most importantly – delicious! It is perfect for summer whether you serve it as an app topped on toasted bread, piled on top of grilled chicken or just eat it with a spoon.

When I make this Tomato Bruschetta to add to chicken I add a little tasty marinade which is irresistible. I won’t keep you in suspense too long as I will be featuring the recipe next week for my Bruschetta Chicken. It’s so good!

So what makes this simple and fresh Tomato Bruschetta so good? I only use Roma tomatoes which gives this Bruschetta a nice texture. It’s mixed with fresh basil, minced garlic, balsamic vinegar, extra virgin olive oil and a little salt and pepper. That’s it! It’s topped on slices of bread that have been toasted with butter and a sprinkle of garlic powder. With the bounty of tomatoes soon to be in season this is a recipe you’ll want to keep handy all summer.

Tomato Bruschetta

  • Cook Time: 12 minutes
  • Total Time: 27 minutes

Ingredients

  • 1 1/2 pounds Roma tomatoes (seeded and chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons chopped basil
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 French baguette (sliced)
  • 2 tablespoons butter (softened)
  • 1/4 teaspoon garlic powder

Instructions

  1. In a large bowl mix tomatoes, garlic, basil, olive oil, balsamic vinegar, salt and pepper.
  2. Cover and refrigerate for at least 15 minutes.
  3. When ready to serve preheat oven to 350 degrees.
  4. Place sliced bread on a large baking sheet.
  5. Lightly brush slices of bread with butter and sprinkle with garlic powder.
  6. Bake on the center rack of oven for about 10-12 minutes until toasted.
  7. To serve,top toasted bread with tomato mixture or place in a bowl with toasted bread served on the side.

Notes

Tomato Bruschetta is perfect topped on grilled chicken or fish too!
