Who doesn’t love a good BLT sandwich? The big question is toasted or untoasted? I prefer lightly toasted.

And why is a BLT sandwich so much better when someone else makes it for you? Just like a peanut butter and jelly. While it’s good when you throw it together yourself, it just tastes so much better when someone else makes it for you.

Every once in awhile we’ll just whip up BLT’s for dinner and boy are they good. What’s not to love about crispy bacon, juicy tomatoes and chopped lettuce on toasted bread. The key to a good BLT is good bacon and good bread. So simple yet so good!

This BLT Pasta Salad is everything you love about a BLT tossed in a delicious pasta salad and tossed in a creamy dressing. It’s good. It’s really good. Just ask Mr. Mother Thyme. He’s in love with this salad.

If you’re bored with your same old same old pasta salad and looking to whip up something new this summer then you are going to want to try this! It’s perfect for a summer picnic, potluck, BBQ or just because. I am always whipping up pasta salads just for the family to munch on. It’s great to have stashed in the refrigerator to make a light lunch or as a side dish.

This BLT Salad is tossed in an easy, creamy dressing that you’re going to love not just for this salad but for any salad! If you’re making this BLT Pasta Salad ahead of time add half the dressing when you make it and reserve half to toss in the salad right before serving so it’s nice and creamy.

There is nothing better than good bacon! I always bake my bacon too. It turns out perfect and crispy everytime! It’s super easy and little clean up and you get the best crispy bacon. Just preheat the oven to 375 degrees. Line a large baking sheet with foil. Add strips of bacon and bake for 20-23 minutes until nice and crispy. Transfer bacon to a plate lined with a paper towel to cool. Once cooled, crumble bacon.

For a little extra crunch I like to add in croutons to round out the BLT flavors. They’re totally optional but I definitely recommend. If you add croutons I suggest adding them right before serving. If you add them too soon and then keep the salad in the refrigerator the croutons get soft. If you add them right before you serve it and you’ll be just fine!

BLT Pasta Salad

Everything you love about a BLT tossed in this easy and delicious BLT Pasta Salad! If you like BLT’s, you’re going to love this!

Ingredients

Salad

  • 1 pound bacon (cooked and crumbled)
  • 1 pound penne pasta or similar (cooked, drained and cooled)
  • 23 cups chopped iceberg lettuce
  • 12 cup halved cherry tomatoes
  • 1 cup shredded cheddar cheese
  • 2 cups croutons (optional)

Dressing

  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1 tablespoons sugar
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon dried chives
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon liquid smoke (optional but gives it a hint of smoky flavor)
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon pepper

Instructions

  1. In a large bowl toss together bacon, pasta, lettuce, tomatoes and cheese. 
  2. Season with a pinch of salt and pepper.

Dressing

  1. In a small bowl or mason jar mix together mayonnaise, sour cream, milk, sugar, Parmesan cheese, chives, garlic powder, onion powder, liquid smoke, salt and pepper until combined.
  2. Toss about 1/2 cup of the dressing with salad then chill salad.
  3. Before serving toss with remaining dressing, top with croutons and season with additional salt and pepper.

Notes

Salad is best day 1 or 2. If making ahead of time only add a little bit of the dressing. Reserve the remaining dressing to toss right before serving.
