I am all about effortless entertaining. Not only because I want things to be simple and easy but because I actually have fun doing it, too. On hot days everyone wants to beat the heat in our pool so we often have impromptu pool parties with friends and family. I always like to have things on hand in case a quick swim turns into an outdoor BBQ and hanging by the pool until sunset.

One of my favorite desserts I love to have on hand are ice cream cakes. Seriously I always have one stashed in my freezer chest. They’re great to have for any occasion or just because you’re in the mood for a yummy ice cream treat! My kiddos love them! That’s why I hide them in the freezer chest or they’d have that for dessert every night!

Strawberry Sauce

While these ice cream cakes are wonderful on their own once in awhile I like to dress them up a little for even more yumminess! Our family LOVES the OREO® Ice Cream Cake! It’s cookies and cream goodness in every bite!

One of my favorite toppings is my simple 3-ingredient Strawberry sauce! This delicious Strawberry sauce couldn’t be any easier to make and makes the perfect topping for the OREO® Ice Cream Cake! I mean what could be better than OREO® ice cream and strawberries, right? Seriously wait until you try this! It’s pretty tasty!

To make Strawberry sauce you just need strawberries (obviously), sugar and a lemon. That’s it my friends! Just wash and hull your strawberries and cut them in half. I like them cut in half, if they are big berries I might cut them in thirds but you want to keep the slices a good size since they’ll soften as they cook. If they are too small they get mushy. I like them big so you get sweet chunks of strawberries.

You’ll just toss all the ingredients in a saucepan, bring it to boil over medium heat, then reduce the heat a smidge until it’s at a simmer and let it simmer for about 20 minutes stirring occasionally until the strawberries are soft. The sauce will thicken as it cools.

Once the sauce has cooled pour this sauce over the OREO® Ice Cream Cake or just eat it with a spoon! It’s fantastic and it’s perfect for entertaining. I made this for some of my family that was visiting from out of town and they were like “WOW”! Even Mr. Mother Thyme was like, “This in incredible!” Just try it! Trust me, it’s fabulous!

OREO® Ice Cream Cake with Strawberry Sauce

Celebrate any occasion with a OREO® Ice Cream Cake topped with a fresh and delicious 3 ingredient Strawberry Sauce.

Ingredients

  • 1 pound strawberries (wash, hulled and cut in half)
  • 1/3 cup sugar
  • 1/2 lemon (juiced)
  • 1 OREO® Ice Cream Cake (found in the bakery or freezer section at the grocery store)

Instructions

  1. Bring strawberries, sugar and lemon juice to boil in a medium saucepan over medium heat.
  2. Stir and reduce heat to a simmer.
  3. Cook, stirring occasionally until strawberries soften, about 20 minutes.
  4. Remove from heat and set aside to cool.
  5. Sauce will thicken as it cools.
  6. Once cooled, pour into a container and refrigerate until ready to serve.
  7. When ready to serve slice cake into pieces and drizzle with strawberry sauce.
