Ingredients
1/2 cup Balsamic vinegar
2 tablespoons agave nectar
1 tablespoon olive oil
4 boneless, skinless chicken breast
Salt and pepper to taste
Directions
In a small bowl whisk together balsamic vinegar, agave nectar, olive oil. Â Season chicken with salt and pepper and place in a baking dish. Â Pour marinade over chicken and marinate in refrigerator for 2-3 hours.
Preheat oven to 375 degrees. Â Bake chicken for 30-40 minutes until chicken is thoroughly cooked and internal temperature is at least 165 degrees F. Â
Serve with a side of rice and greens or top on an arugula salad with sliced strawberries, goat cheese, almond slivers and a balsamic reduction. Â To make a balsamic reduction place desired amount of good quality balsamic vinegar in a saucepan. Â Cook on medium low heat, stirring occasionally until liquid reduces to half, about 10 minutes. Â Remove from heat and set aside to cool. Â
