I am thrilled to be sharing this month’s Secret Recipe Club recipe from the beautiful site Mangia.  Chelsy, the voice behind Mangia shares fabulous recipes such as Zucchini Apple Walnut Muffins and Maple Coconut Granola just to name a few.   The funny thing is at the last reveal in December she featured Mother Thyme.  So how fitting that I get to share her lovely site on Mother Thyme today.  

I am featuring Balsamic Agave Chicken from Mangia.  This chicken recipe has actually become one of our favorites and I have made this recipe several times.  Each time I make this for the twins Tyler says Mmmmm!  Translation- so good!  

I just love the combination of balsamic vinegar with the sweet agave nectar.  It is a simple dish to prepare and has such incredible flavor.  This chicken is perfect with a side of rice and greens or my favorite way, sliced on top of an arugula salad with fresh strawberries, goat cheese, almond slivers and a balsamic reduction.  

Simply delicious!  


Balsamic Agave Chicken

Ingredients
1/2 cup Balsamic vinegar
2 tablespoons agave nectar
1 tablespoon olive oil
4 boneless, skinless chicken breast
Salt and pepper to taste


Directions
In a small bowl whisk together balsamic vinegar, agave nectar, olive oil.  Season chicken with salt and pepper and place in a baking dish.  Pour marinade over chicken and marinate in refrigerator for 2-3 hours.


Preheat oven to 375 degrees.  Bake chicken for 30-40 minutes until chicken is thoroughly cooked and internal temperature is at least 165 degrees F.  


Serve with a side of rice and greens or top on an arugula salad with sliced strawberries, goat cheese, almond slivers and a balsamic reduction.  To make a balsamic reduction place desired amount of good quality balsamic vinegar in a saucepan.  Cook on medium low heat, stirring occasionally until liquid reduces to half, about 10 minutes.  Remove from heat and set aside to cool.
