Coconut Ramen Noodle Soup
Do you like ramen noodles? I’ll admit I do. There was a time when I was younger and I am sure many of you can relate when dining on a package of these was a regular occurrence. They provide a simple, cheap and easy meal.
The noodles themselves are all that bad. It is what lies inside those tiny little silver packets that are enclosed with the noodles that I like to stay away from. Here is a great way to fulfill your ramen noodle craving without using the seasoning packet and is so incredibly easy.
This is a quick meal to whip up for lunch or a simple dinner. It also works as a great base to additional vegetables if you choose or just leave it as is and enjoy. Making a bowl of this and omitting the enclosed seasoning packet gives you a soup that is bursting with flavor and takes you from an average bowl of ramen noodles to a delicious meal that only took minutes to make and didn’t break the bank. You can’t beat that.

Coconut Ramen Noodle Soup
Ingredients
- 13.5oz can lite coconut milk
- 13.5oz can water
- 1/2 teaspoon low sodium soy sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Sriracha hot chili sauce*
- 1/4 cup frozen and thawed chopped spinach
- 1/4 cup shredded carrot
- 3.2oz package ramen noodles without the seasoning packet
- Salt and pepper to taste
Instructions
- In a medium saucepan add coconut milk, water, soy sauce, garlic powder, onion powder, Sriracha sauce, spinach and carrots. Bring to a boil and add in ramen noodles. Stir until ramen noodles are cooked, about 3 minutes.
- Remove from heat. Season with salt and pepper to taste if desired and serve.
- Garnish with bean sprouts and cilantro if desired.
Notes
Depending on your heat preference you can increase or decrease the amount of Sriracha hot chili sauce you use.
Those noodles with the seasoning packet were all the rage as a raw snack for school when I was in elementary, and I was always devastated my mom wouldn’t buy them for us 🙂 This looks delicious, and I love the new header look!
When I lived in Korea I pretty much ate ramen Monday-Friday! This looks a million times better-yum!
I think I’d add a little bit of chicken and a few extra veges and this would be the perfect quick dinner. Yum!
This soup looks healthier and tastier than the seasoning pack version. I might had a little cornstarch to the water to make the soup creamer! 😀

Hi Sue! Thanks for your comment. I have not tested this recipe with coconut milk from the carton. If that is what you have on hand, you can substitute it and it should provide a similar outcome. Enjoy!
