This Apple Puff Pastry Tart is simplicity at its finest. You simply thaw the puff pastry and place it on a parchment or silicone lined baking sheet. Toss sliced RubyFrost Apples with cinnamon, sugar, lemon zest and my secret ingredient vanilla bean together and arrange them on top of the puff pastry. After about 30 minutes you have a gorgeous dessert to slice and serve. How simple is that?

Apple Puff Pastry Tart
This simple and elegant Apple Puff Pastry Tart is made with buttery puff pastry and topped with crisp apples tossed in cinnamon, sugar, lemon zest and vanilla bean. Top with a scoop of vanilla ice cream for an unbelievable dessert you won’t be able to resist.

- Cook Time: 30 minutes
- Total Time: 45 minutes
- Yield: 6 -8 servings
Ingredients
- 1 sheet frozen puff pastry (thawed)
- 1 vanilla bean
- 3 RubyFrost apples (peeled, cored and sliced 1/4 inch thick)
- 2 tablespoons sugar
- 1 teaspoon lemon zest
- 1 tablespoon apricot preserves
- 1/4 teaspoon cinnamon
- Pinch of fleur de sel or sea salt (optional)
Instructions
- Preheat oven to 400 degrees. Line a large baking sheet with parchment paper or a silicone liner.
- Unfold puff pastry and place on baking sheet. Press down seams if necessary.
- Split vanilla bean lengthwise and scrap seeds, discarding pod. Toss vanilla bean in a large bowl with apples, cinnamon, sugar and lemon zest.
- Arrange apples on top of puff pastry as desired leaving a 1/2 inch border.
- Bake on center rack for 25-30 minutes until apples are tender and pastry is golden brown.
- Place apricot preserves in a microwave safe bowl and microwave for 10-20 seconds until warm. Mix until smooth. Brush on top of apples and pastry.
- Sprinkle with a pinch of fleur de sel or sea salt.
- Serve warm or at room temperature
