One thing I love about summer is fresh peaches. There is nothing better than biting into a juicy, ripe peach. Sure it can be a little messy but it’s so worth it. At the farmer’s market I buy them by the bushel for salsas, jam and snacking. I also will slice them to freeze and use smoothies.
I was inspired to create this Oatmeal Cookie Peach Cobbler after my Sugar Cookie Apple Cobbler. Big chunks of oatmeal cookie topping with combined with the juicy peaches is delicious. It’s so good I couldn’t resist sharing it. Even Mr. Mother Thyme who is not a big peach lover said this is a keeper. I love it warm with a scoop of vanilla ice cream.
The best part is how easy it is. It only requires a few ingredients including a package of oatmeal cookie mix, some freshly sliced peaches and a stick of butter. No mixing, no fussing, just toss the ingredients in a pan and bake it for about thirty minutes. Super easy and incredibly tasty!
Oatmeal Cookie Peach Cobbler

Ingredients
- 2 pounds fresh peaches (peeled and sliced)
- 1 tablespoon light brown sugar
- 1 teaspoon lemon zest
- 1 17.5 ounce pouch oatmeal cookie mix
- 1/2 cup 1 stick butter, cut into small cubes
Instructions
- Preheat oven to 350 degrees.
- Spray a 7×11 baking dish with cooking spray and set aside.
- In a medium bowl toss sliced peaches with brown sugar and lemon zest.
- Spread peaches evenly on the bottom of baking pan.
- Sprinkle oatmeal cookie mix on top of peaches.
- Top with cubed butter, arranging evenly on top of cookie mix.
- Bake on center rack for 30-35 minutes until golden brown.

Have made 2 of this recipe already. It’s very easy and very good!! My husband said it was the best dessert I have ever made! I normally make things from scratch but decided to try this and it was fantastic. I made another one for a close friend and I will give her the recipe. I used Betty Crocker, a 11.5 ounce pouch of oatmeal cookie mix. I’m going to try it with apple’s next.
