Snickerdoodle Protein Balls
If you love snickerdoodles, you are going to love these Snickerdoodle Protein Balls! They are easy and delicious and make the perfect healthy snack packed with protein, fiber and no refined sugar!
I love to store them in the refrigerator to have on hand all week.
Every week I love to make some sort of protein/oatmeal ball. These are one of my favorites! They are so tasty and make the perfect grab and go snack!
I love to add these to a snack plate that I make with some other yummy and healthy treats like fresh berries, sliced apples and sliced cheese. It’s the perfect plate with a variety of goodies for snacking. It makes a great after school snack too!

Ingredients
- 1 1/2 cups old-fashioned rolled oats
- 2 scoops vanilla or unsweetened protein powder
- 1 tablespoon ground cinnamon
- Pinch of salt
- 1/4 cup coconut oil
- 3/4 cup almond butter
- 1/2 cup honey
- 1 teaspoon vanilla
Instructions
- Place oats in a food processor and blend on high for a few minutes until you get the consistency of flour.
- Add oat flour to a large bowl along with protein powder, cinnamon and salt and mix together.
- Melt coconut oil and add to oat mixture along with almond butter, honey and vanilla.
- Mix together until combined.
- Place mixture in the freezer for about 15 minutes until mixture is hard enough to roll into ball.
- Remove from freezer, and roll into bite size balls. Place in an air tight container. Use wax paper in between layers.
- Store in refrigerator.
