Easy No-Bake Cathedral Cookies

Don’t you love a no-bake recipe? I do! Especially when they are as good as these No-Bake Cathedral Cookies, also known as Church Window Cookies. If you’ve had these before let me know in the comments what you call them. I just call them delicious!

And if you’ve never had or made these before, let me introduce you to these yummy bites of goodness. These No-Bake Cathedral Cookies only require 4 ingredients – a bag of semi-sweet chocolate chips, a stick of unsalted butter, a bag of mini marshmallows and coconut flakes. That’s it!

I recommend using a good quality semi-sweet chocolate chips. I like Ghirardelli, but use whatever your favorite is.

You are simply going to melt the butter and chocolate chips until creamy. I recommend slicing the butter first. Then you can melt it using a double boiler, or in 30 second intervals. I usually use my microwave. It takes me about 2 minutes total to melt it.

Once the chocolate is melted and the mixture is nice and creamy I set it aside to cool for about 5 minutes. In the meantime I line a large baking sheet with wax paper and sprinkle it with coconut flakes. After 5 minutes I mix stir the marshmallows into the chocolate mixture and stir it until all the marshmallows are covered with the chocolate.

Next I take half of the mixture and spoon it on top of the coconut flakes to form a log then sprinkle some more coconut flakes on top and then roll it up in the wax paper. I’ll do the same thing with the remaining mixture. You can go as wide or narrow with the log as you’d like. You can do a long log which will result in smaller cookies once sliced, or a wider smaller log that will result in a larger cookies once sliced. I usually do one of each.

Once rolled in the wax paper I pop it in the freezer for at least an hour or two. I actually keep mine in the freezer then pop them out and slice a few as needed. It’s a great treat to keep on hand if you need a simple dessert, or have unexpected guests. These are also fantastic to make for a cookie exchange!

These are a great make ahead cookie to keep stashed in the freezer so you have them all holiday season. Not only are the easy, but they are delicious too! My family loves these, especially Eden. It reminds her of fudge. I’ll catch her from time to time slicing some when I have it in the freezer.

Easy No-Bake Cathedral Cookies

Ingredients

  • 1 bag (12 oz.) good quality semi-sweet chocolate chips
  • 1 stick (1/2 cup) unsalted butter
  • 1 bag (10 oz.) mini marshallows
  • 1 1/2 cups sweetened coconut flakes

Instructions

  • Slice butter and add to a large microwave safe bowl along with chocolate chips and microwave in 30 second intervals, stirring after each interval until chocolate is melted and mixture is creamy.
  • Alternatively you can melt the chocolate and butter using a double boiler.
  • Set melted chocolate aside for 5 minutes.
  • In the meantime line a large baking sheet with wax paper and sprinkle the center of wax paper with half of the coconut flakes.
  • After 5 minutes or when the chocolate mixture has cooled a bit, stir in marshmallows until coated with chocolate. You don’t want the chocolate too warm or it will melt the marshmallows.
  • Spoon half the mixture on top of the coconut flakes to form a log. You can make it long and narrow for smaller slices, or small and wider for larger slices.
  • Sprinkle top with additional coconut flakes if needed.
  • Next tightly wrap the mixture, forming the mixture into a log form with your hands.
  • Set aside and repeat with remaining mixture.
  • Place wrapped logs in the freezer for at least 1-2 hours or store in the freezer until ready to eat.
  • To serve, cut into slices. Store slices in an airtight container.

Notes

  • Can be kept in the freezer for 3-4 months.
  • After logs are formed and it has been in the freezer for a few hours, you can cut into slices then store slices in a freeze safe container or storage bag so the slices are ready to go when needed.
