Chocolate Chip Cookies
One of my most requested desserts are my Chocolate Chip Cookies. I have made this recipe for years and until yesterday never changed a thing. When I was sipping one of my many cups of coffee while creating my menu for the week I thought adding coffee to my chocolate chip cookies would be a great addition. Coffee and Chocolate Chip Cookies all combined in to one delicious cookie, my dream come true!
These cookies are ridiculously good, seriously! I am torn between what version I like better, the original or the new version with coffee. I guess I might have to make the original version again to compare. Any excuse to make another batch of homemade chocolate chip cookies.
The coffee version is not overpowering of coffee flavor, but they are tasty. It is just a nice hint of coffee and the coffee intensifies the chocolate.
My next challenge. Creating a fat free or low fat version of these cookies! In the meantime, I will just enjoy a few of these and pretend there are no calories in them!

Chocolate Chip Cookies with Coffee
- Yield: 4 dozen
Ingredients
- Chocolate Chip Cookies with Coffee
- Makes 4 dozen
- Ingredients
- 2 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable shortening
- 3/4 cup sugar
- 3/4 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 3 tablespoons hot water
- 1/3 cup instant coffee
- 2 large eggs
- 2 cups semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Sift flour, baking soda and salt in medium bowl. In a small bowl add hot water to instant coffee. Using an electric mixer or stand mixer, beat butter and and shortening in large bowl until fluffy. Add sugar, brown sugar, vanilla and coffee and beat well. Beat in eggs one at a time. Gradually add in flour mixture. Stir in chocolate chips by hand.
- Drop tablespoon size mounds on to nonstick cookie sheets spacing each about 2 inches apart.
- Bake cookies about 9-12 minutes until golden brown. Let cool for 5 minutes then transfer to wire racks.

What brand of instant coffee did you use in this recipe.
Hi, I use a store brand regular flavor instant coffee. Any kind would do, Tasters Choice, Maxwell House, store brand as long as its not a flavored or decaffeinated. Let me know how these turn out for you.

what if we do not hve light brown sugar?
Hi Sandra, You can add a little molasses to the sugar, about 1 tablespoon. Enoy!
