Buffalo Chicken Quesadilla
No, No, Â you didn’t miss the memo that its Buffalo Chicken theme week, its not. Â I really hate posting two similar recipes in a row but as I was deciding what to whip up for Mr. Mother Thyme and I today I decided to make Buffalo Chicken Quesadilla. Â The intent was merely to make for us to enjoy for lunch but it was to good not to share. Â I don’t mean to bore you with two Buffalo chicken recipes in a row but when something is good, its good! Â
My next post will be Buffalo Chicken pie (joking)! Â
This is now my third Buffalo Chicken recipe (in two weeks)! Â I promise NO MORE (for a little bit at least). Â

Buffalo Chicken Quesadilla
Ingredients
1 12.5oz can of chunk white chicken, drained
½ cup Ranch dressing
½ cup hot sauce
3 cups mozzarella cheese
6 soft flour tortillas
Directions
In a medium bowl combine chicken, dressing and hot sauce. Â
Spray large skillet with non-stick cooking spray. Â Lay one tortilla on skillet and a top with one third of the chicken mixture. Â Top with 1 cup cheese followed and flour tortilla.
Cook on medium heat until bottom is slightly brown and flip to cook remaining side.
Remove from skillet and let sit to cool. Â Cut in to triangles and serve.
Notes:
For a lighter version, use light Ranch dressing.

I make quesadillas all the time, but never think to make them buffalo chicken style! I love this idea!!
