“Eyeball” Cupcakes

  • Cook Time: 14 minutes
  • Total Time: 34 minutes
  • Yield: 24 cupcakes

Ingredients

  • 1 box chocolate cake mix
  • 1 package (3.9 ounce JELL-O Chocolate Instant Pudding)
  • 1 package (8 ounce PHILADELPHIA Cream Cheese, softened)
  • 1/4 cup butter (softened)
  • 1 teaspoon vanilla
  • 16 ounces powdered sugar (sifted)
  • 24 ring-shaped chewy fruit snacks
  • 24 miniature candy-coated chocolate pieces
  • 1 tube red decorating gel

Instructions

  1. Line muffin tin with paper liners and set aside.
  2. Prepare cake batter as directed on package adding dry pudding mix and stir until blended.
  3. Spoon about 3 tablespoons of batter into each paper-lined muffin tin.
  4. Bake as directed on package for cupcakes and allow cupcakes to cool completely before frosting.
  5. Beat cream cheese, butter and vanilla in medium bowl with mixer until well blended. Gradually beat in sugar. Spread onto cupcakes.
  6. Decorate with remaining ingredients to resemble “eyeballs”.
