This breakfast casserole is perfect for Christmas morning or any occasion! I love that it can be prepped the night before and I can pop it in the oven in the morning.

If you are looking for an easy and delicious make-ahead breakfast casserole, this is for you. I’ve been making this for years, and prior to that my mom would always make it for Christmas morning so it always reminds me of Christmas morning there.

This is actually just my “Breakfast Casserole” recipe I shared years ago, just updated with better photos and a sparkling new title.

This recipe uses breakfast sausage but you can swap out crumbled sausage for crumbled cooked bacon, or if you are feeling festive add a little of each.

Make-Ahead Christmas Breakfast Casserole

Ingredients

  • 6 slices of white bread, cubed
  • 1 pound pork sausage, cooked and crumbled
  • 1 red pepper, seeded and diced
  • 1/2 cup sweet onion, diced
  • 2 cups shredded cheddar cheese
  • 7 large eggs
  • 2 cups milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 350 degrees. Spray a 9×13 inch baking dish with cooking spray.
  2. Spread the cubed bread evenly in the bottom of casserole dish.
  3. Top with cooked sausage, then peppers, onions and cheese.
  4. In a medium bowl beat eggs, milk, Worcestershire sauce, dijon, salt and pepper.
  5. Pour egg mixture on top of casserole.
  6. Bake for 50-55 minutes until set.

Notes

This can also be made the night before, cover and refrigerate overnight.
