Easy 4 Ingredient No-Bake Dessert: Vanilla Icebox Cake

What’s not to love about an icebox cake. Not only is it easy to whip together, it is so yummy too!
This is one of my go-to desserts. It’s always a family pleaser and a crowd pleaser! There are so many variations by changing out the pudding flavor or even softening some canned chocolate frosting and spreading it on top of the cake for an eclair cake.
For the summer I love the simple flavors of this vanilla cake. I love to pair it with some fresh berries and kiwi. It’s so good!

I’ve made this with different flavors of pudding mix. Banana and coconut pudding is really good too. I love the French vanilla pudding mix with this vanilla icebox cake. It’s so creamy and delicious.
To make this you simply add a layer of graham crackers in the bottom of a 9×13 baking dish. Mix pudding with milk and a tub of cool whip and add half over top of graham crackers. Add another layer of graham crackers and remaining pudding. Top with graham crackers and cool whip. Refrigerate for 5-6 hours or overnight. The graham crackers soften and create delicious layers to this creamy cake.
This is a no-fail dessert that everyone will love!

Easy 4 Ingredient No-Bake Dessert: Vanilla Icebox Cake
Ingredients
- 1 box (14.4 oz) honey graham crackers
- 2 boxes (3.4 oz each) french vanilla or vanilla pudding mix
- 3 cups milk
- 2 containers (8 oz each) cool whip, thawed
Instructions
- Line the bottom of a 9×13 baking dish with a layer of graham crackers. You can break them in half so it fills the entire pan.
- In a large bowl mix together pudding mix and milk. Let it sit for a few minutes until it begins to thicken then fold in 1 container of cool whip until blended.
- Spread half of the pudding on top of graham cracker layer.
- Top pudding with another layer of graham crackers.
- Spread remaining pudding on top of graham cracker layer.
- Add a layer of graham cracker on top of pudding.
- Spread remaining container of cool whip on top and sprinkle with some crushed graham crackers.
- Cover with plastic wrap and refrigerate 5-6 hours or overnight before serving.
