There’s only one more week of school left and my kiddos graduate kindergarten! Just thinking of that makes my heart sink. My babies are growing up. It seems like yesterday they were headed off to their first day of school. Now we are days away from summer vaca!
I’m looking forward to having my kids home. I have a lot of fun summer activities planned like camping, berry picking, lazy days swimming in the pool and a family vacation later in the summer to Ocean City.
Whether my kiddos are at home or school we love starting the day with a yummy breakfast. Even if I’m racing against time to get them to school or to play outside I don’t let them out the door without breakfast. Grab and go breakfasts are a staple in my kitchen and one of our family favorites is overnight oats. I have been a fan of overnight oats for years and it makes my busy mornings so much easier.
Overnight oats are soaked oats you make with various flavor combinations that sit overnight in the refrigerator and are ready in the morning. How simple is that? Not only did overnight oats create a new way to enjoy oats, but it also unlocked a new season for oats – now you can take oatmeal out of the cold seasons and the pantry and put it into the fridge for a cool, versatile alternative to start your summer mornings. The two major benefits of overnight oats are ease and convenience. Overnight oats work through the night, so families’ mornings can be hassle free. Just combine Quaker Old Fashioned Oats and milk (or a preferred milk alternative), layer on favorite toppings and let it chill overnight. A delicious meal will be ready to simply grab-and-go in the morning!

This Lemon Poppy Seed Overnight Oats is truly irresistible. And I’m not just saying that to say it, I really mean it. I have made a lot of different varieties of overnight oats and this one is on the top of my list. The overnight oats are soaked in a combination of milk, lemon zest, maple syrup and poppy seeds. The oats alone are so flavorful! To add even more lemony deliciousness, I top it with fresh homemade lemon curd and creamy vanilla yogurt. Hello yumminess! It’s crazy good and if you are a lemon lover like I am you will be devouring this all summer long!
Never miss a yummy thing!
