I love simple desserts that don’t require a lot of fuss. This Chocolate Chip Cake is one of those desserts. I like to bake cakes, including this in an 8 inch cake pan. An 8 inch cake is the perfect size cake for a weeknight dessert. If I make a bigger cake, that only leaves room for temptation with leftovers. Then I find myself at midnight sitting in the kitchen in the dark, fork in hand digging into the cake. We’ve all been there, right? What you need
Instant vanilla pudding mix (the secret ingredient that really makes this yummy.)
Light brown sugar
Semi-sweet chocolate chips
Step one: In a large bowl mix flour, pudding mix, sugars, baking powder and salt.
Step five: Using an electric mixer, mix butter and sugar until combined. Stir in vanilla and milk 1 tablespoon at a time until consistency is creamy. If you add too much milk, add a little confectioners sugar to thicken the frosting. Stir in chocolate chips. Don’t you just want to eat this frosting with a spoon?
